Chris’ Rice Pudding

Chris, my baby boy had a birthday a few weeks ago and he requested rice pudding rather than cake. This is his favorite dessert.
Preheat oven to 350 F

Ingredients needed:
4 cups of water
2 cups rice
1/4 tbsp. oleo or butter
1 tsp. sea salt
2 tablespoons cinnamon
1 tablespoon pumpkin pie spice
1 egg
1 cup half and half
1/2 cup sugar
1 cup raisins

Place the first 6 ingredients in pan with lid. Follow package instructions on cooking rice. Set timer for 15 to 20 minutes depending on package instructions. When the timer goes off immediately remove rice from heat.

Blend in raisins or your favorite dried fruit(s). Blend 1 egg, 1 cup half and half and 1/2 cup sugar in separate bowl. Pour into rice and bake for about 1/2 hour. Egg needs to cook thoroughly and raisins will plump and become more flavorful.
Enjoy hot or cold.
