Tasty and Easy Scalloped Potatoes

I love this new slicer I ordered from Mariolina's pampered chef party. I can slice a potato in nothing flat. Mari is away right now attending her grandmother's funeral in NYC. I visited my son's home, when I got out of work Saturday and decided to make him some scalloped potatoes while he was baching it. These cool little prongs grab your food and hold it while protecting you from the sharp blades of the slicer. 

The knob you are holding gradually goes down until the entire potato is sliced. Lay them in the baking pan, or in a crock pot. Scatter a little flour, sea salt and pepper. I love to make it in a crock pot as the potatoes come out nice and tender and tasty and I don't have to watch it cook but I forgot to bring it with me. Potatoes cooked slowly also retain more *vitamins, and notice I leave the skins on also to keep more of their vitamins. Leaving the skins on increases the nutrition by about 30%.


Slice your polish sausage or ham, then layer it on top the potatoes. Make as many layers of potatoes and meat as you want. Pour about 1/2 cup milk over the potatoes. Cover with aluminum foil or a lid; if your pan has one, or your potatoes may get a little crispy around the edges. Bake at 350 till potatoes are tender when tested with a fork. 



This can be used as the main dish. Potatoes are a vegetable while being a complex carbohydrate so by adding a meat you have your meal covered in one dish. Also potatoes, when slow cooked are significantly high in vitamin c; 45% of your daily intake; more potassium than bananas, spinach or broccoli, 10% of  the daily requirement of vitamin B6; folate 21%, iron 18%, magnesium 21%, manganese 33% and other trace minerals.  Use red or blue potatoes and increase the anti-oxidants significantly. 


Potatoes that are slow cooked are wonderful for the diet, aid in controlling blood pressure, are low fat, high  in fiber (daily intake of 26%) and provide a satisfying meal. Another plus about potatoes is that they are one of most economical foods we can find in the produce aisle.

I could not wait to participate in both challenges; carpe diem and haiku my heart. Kristjaan is offering us inspiration by posting on awakening, which may conjure up different meanings for different individuals. I love the way he teaches and inspires simulataneously. As you can see, he awakened something within me. :-)

Then while visiting different readers from some of my friend's blogs I happened upon the challenge "haiku my heart." The blog administrator has a lovely and creative blog, which I enjoyed visiting immensely. We have such a lot of talent in the blogosphere, don't you think?

Tiger looks like he is surfing the internet. Why not ? He watches me  go online so much that he probably wants to see if there's any  chats for cats. Well, Tiger can help me contribute to Orange you glad it's Friday. :-) He looks orange to me, but anyway, back to the heart of the issue...

Blessings to Mariolina and her family.

While posting this this weekend my heart goes out to Mariolina and her New York family. Her maternal grandmother has gone on to be with the Lord and she is visiting her family there to support them and join with them and bidding their fond adieu. A part of Mari is forever changed because of the huge impact her grandmother had on her. She brought her to the U.S. as a small child and she has remained very close to her until she left us. Her Grandmother was a strong influence in her life, and all us grandparents should strive to be like her; loving, supportive, nurturing, and teaching.

Before Mariolina came to Michigan to marry my baby boy, we would talk on the phone sometimes and she would mention that she was getting ready to go to her grandmother's home to braid her hair and hang out with her then spend the night. There was a special bond that will always be there, which time never removes.
